Creamy Chicken Alfredo Soup Bowl

This creamy Chicken Alfredo Soup is a comforting and flavorful twist on a classic Italian dish. Tender chicken and pasta simmer in a rich Alfredo sauce, making it the perfect cozy meal.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 1/2 cup milk
  • 8 ounces fettuccine pasta, broken into smaller pieces
  • 2 cups fresh spinach, chopped
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and season with Italian seasoning, garlic powder, salt, and pepper. Cook until chicken is cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add minced garlic to the pot and cook for 30 seconds until fragrant. Pour in chicken broth and bring to a simmer.
  3. Add fettuccine pasta and cook according to package directions, about 8-10 minutes, or until pasta is tender.
  4. Reduce heat to low. Stir in heavy cream, Parmesan cheese, cream cheese, and milk until the cheeses are melted and the sauce is smooth.
  5. Add cooked chicken and spinach to the soup. Cook until spinach is wilted, about 1-2 minutes.
  6. Garnish with fresh parsley and serve hot.

Notes

For a thicker soup, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water and add it to the soup while it’s simmering. You can also add a pinch of red pepper flakes for a little heat.
