  • 2 boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 2 cups water
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
  2. Add chicken breasts, chicken broth, water, salt, pepper, thyme, and parsley to the pot. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
  4. Remove chicken breasts and shred with two forks.
  5. Add egg noodles to the pot and cook for 6-8 minutes until tender.
  6. Return shredded chicken to the pot and stir well. Adjust seasoning as needed.
  7. Serve hot, garnished with fresh parsley if desired.
