Cheesy Ranch Potatoes and Smoked Sausage

  • 4 cups diced red potatoes
  • 1 tablespoon olive oil
  • 1 packet ranch seasoning mix
  • 8 ounces smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
  3. Spread potatoes on a baking sheet and bake for 25 minutes, stirring halfway through.
  4. Remove from oven and stir in sliced smoked sausage.
  5. Sprinkle shredded cheddar cheese evenly over the mixture.
  6. Return to oven and bake an additional 5-7 minutes until cheese is melted and bubbly.
