  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups diced potatoes (about 4 medium)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, chopped green onions

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and add the diced potatoes, salt, pepper, and dried thyme. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. In a small bowl, whisk together the flour and milk until smooth. Pour the mixture into the soup, stirring constantly. Bring to a simmer and cook for 2-3 minutes, or until the soup has thickened slightly.
  5. Remove the pot from the heat and stir in the shredded cheddar cheese until melted and smooth.
  6. Serve hot, topped with sour cream and chopped green onions, if desired.

Notes

For a richer flavor, use beef broth instead of chicken broth. You can also add other vegetables like carrots or celery to the soup. Feel free to experiment with different cheeses, such as Monterey Jack or Colby Jack.
