Cheesy Funeral Potatoes

Cheesy Funeral Potatoes are a comforting and creamy casserole featuring crispy hash browns, melted cheese, and a crunchy topping, perfect for gatherings and family meals.

  • 6 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 2 cups crushed cornflakes
  • 2 tablespoons melted butter (for topping)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine thawed hash browns, cheddar cheese, cream of chicken soup, sour cream, 1/2 cup melted butter, chopped onion, garlic powder, salt, and pepper. Mix until well blended.
  3. Transfer mixture into a greased 9×13 inch baking dish and spread evenly.
  4. In a separate bowl, mix crushed cornflakes with 2 tablespoons melted butter.
  5. Sprinkle the cornflake mixture evenly over the potato mixture.
  6. Bake in the preheated oven for 45–50 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Let cool for 5 minutes before serving.

Notes

For extra flavor, add cooked and crumbled bacon or substitute cream of chicken soup with cream of mushroom for a vegetarian version.
