  • 1 cup grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, combine the rolled oats, cinnamon, nutmeg, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, applesauce, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in grated carrots, walnuts, and raisins evenly.
  6. Transfer the mixture to the prepared baking dish and spread it out evenly.
  7. Bake for 35-40 minutes or until the top is golden and the oatmeal is set.
  8. Let it cool slightly before serving. Optionally top with a dollop of yogurt or cream cheese frosting.
