Cajun Potato Soup

A hearty and flavorful Cajun Potato Soup blending creamy potatoes with a spicy Cajun kick, perfect for a cozy meal.

  • 4 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 pound andouille sausage, sliced
  • 2 green onions, sliced
  • Shredded cheddar cheese, for garnish
  • Chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the andouille sausage slices and cook until browned. Remove and set aside.
  2. In the same pot, add onion, celery, bell pepper, and garlic. Sauté until vegetables are tender, about 5 minutes.
  3. Add the diced potatoes, chicken broth, smoked paprika, cayenne pepper, thyme, oregano, salt, and black pepper. Bring to a boil, then reduce to a simmer and cook until potatoes are soft, about 20 minutes.
  4. Using a potato masher or immersion blender, mash or partially blend the soup to your desired texture.
  5. Stir in the heavy cream and cooked sausage. Cook for another 5 minutes until heated through.
  6. Adjust seasoning as needed. Serve hot, garnished with green onions, shredded cheddar cheese, and chopped parsley.

Notes

For an extra spicy kick, add a few dashes of hot sauce or include jalapeño peppers when sautéing the vegetables.
