Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 can (14 oz) tomato sauce
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice or naan bread, for serving

Instructions

  1. Heat butter in a large skillet over medium heat until melted.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in garlic and ginger and cook for 1 more minute until fragrant.
  4. Add garam masala, cumin, coriander, turmeric, and chili powder; cook while stirring for 1 minute to toast the spices.
  5. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned on all sides, about 5-7 minutes.
  6. Pour in tomato sauce, reduce heat to low, and simmer for 10 minutes until chicken is cooked through and sauce thickens.
  7. Stir in heavy cream and cook for an additional 2-3 minutes, allowing the sauce to become creamy and heated through.
  8. Garnish with chopped cilantro and serve hot over basmati rice or with naan bread.

Notes

For extra richness, add a tablespoon of cream cheese or cashew paste to the sauce before stirring in the cream.
