These Buffalo Chickpea Wraps offer a spicy, protein-packed twist on a classic wrap, combining creamy chickpeas with tangy buffalo sauce for a satisfying and flavorful meal.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/3 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 large flour tortillas or wraps
  • 1 cup shredded romaine lettuce
  • 1/2 cup shredded carrots
  • 1/4 cup blue cheese crumbles or vegan alternative
  • 1/4 cup ranch dressing or vegan ranch

Instructions

  1. In a medium bowl, mash the chickpeas slightly with a fork, leaving some chickpeas whole for texture.
  2. Add buffalo sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.
  3. Warm the tortillas in a dry skillet or microwave until pliable.
  4. Divide the buffalo chickpea mixture evenly among the tortillas.
  5. Top each with shredded lettuce, carrots, and blue cheese crumbles.
  6. Drizzle ranch dressing over the fillings.
  7. Roll up each wrap tightly, slice in half if desired, and serve immediately.

Notes

For an extra kick, add sliced jalapeños or a sprinkle of cayenne pepper. These wraps pair well with celery sticks and extra ranch on the side.
