Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/4 to 1/3 cup ice water
  • 1/2 cup fruit preserves (such as strawberry or raspberry)
  • 1 large egg, beaten (for egg wash)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine flour, sugar, and salt.
  2. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Add ice water gradually, mixing until dough comes together.
  4. Divide dough in half, shape each into a rectangle, wrap in plastic wrap, and chill for at least 1 hour.
  5. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Roll out one portion of dough into a 12×8 inch rectangle and cut into eight 3×4 inch rectangles.
  7. Place a teaspoon of fruit preserves in the center of four rectangles, leaving edges clear.
  8. Brush edges with beaten egg, then place remaining four rectangles on top and press edges to seal.
  9. Use a fork to crimp edges and poke a few holes on top for steam to escape.
  10. Brush the tops with egg wash and bake for 20-25 minutes or until golden brown.
  11. Cool completely on a wire rack.
  12. Mix powdered sugar, milk, and vanilla to make glaze and drip over cooled pop tarts.

Notes

For a fun twist, try different fillings like chocolate hazelnut spread or apple cinnamon preserves; serve warm with a glass of milk.
