Delicious Homemade Beet Salad

This vibrant beet salad combines earthy roasted beets with tangy goat cheese and crunchy walnuts, all drizzled with a balsamic vinaigrette. It’s a simple yet elegant dish, perfect as a side or light lunch.

Ingredients

  • 4 medium beets, scrubbed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 oz goat cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 2 cups mixed greens

Instructions

  1. Preheat oven to 400°F (200°C). Toss beets with 2 tablespoons olive oil, salt, and pepper. Wrap in foil and roast for 45-60 minutes, or until tender.
  2. Let beets cool slightly, then peel and slice or cube.
  3. In a small bowl, whisk together balsamic vinegar, Dijon mustard, honey, and 2 tablespoons olive oil to make the vinaigrette.
  4. In a large bowl, combine mixed greens, beets, goat cheese, and walnuts.
  5. Drizzle with balsamic vinaigrette and toss gently to combine.
  6. Serve immediately.
