Hearty and comforting, Beef and Macaroni Soup combines tender beef, vegetables, and macaroni in a flavorful broth perfect for any season.

Ingredients

  • 1 lb ground beef
  • 1 cup elbow macaroni
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Stir in carrots and celery, cook for 5 minutes until slightly tender.
  4. Add beef broth, diced tomatoes, and Italian seasoning. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add elbow macaroni and cook until tender, about 8-10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes

For added flavor, garnish with freshly grated Parmesan cheese and chopped parsley before serving.
