A tangy and versatile balsamic vinaigrette that enhances salads and roasted vegetables with a perfect balance of sweetness and acidity.

  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl, whisk together balsamic vinegar, Dijon mustard, minced garlic, and honey until well combined.
  2. Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing.
  3. Season with salt and freshly ground black pepper to taste.
  4. Transfer to a jar with a lid and shake well before serving.
  5. Use immediately or refrigerate for up to one week, shaking before use.

Notes

For a creamier dressing, add a teaspoon of mayonnaise or Greek yogurt. This vinaigrette pairs beautifully with mixed greens, grilled veggies, or as a marinade.
