Baked Smashed Garlic Parmesan Potatoes

These Baked Smashed Garlic Parmesan Potatoes are crispy on the outside and tender on the inside, flavored with savory garlic and rich Parmesan cheese for a deliciously addictive side dish.

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • Optional: 1/2 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water for 15-20 minutes until tender when pierced with a fork.
  3. Drain the potatoes and place them on a baking sheet lined with parchment paper.
  4. Use a potato masher or the bottom of a glass to gently smash each potato to about 1/2-inch thickness.
  5. In a small bowl, mix olive oil, minced garlic, salt, pepper, and smoked paprika (if using).
  6. Brush the garlic olive oil mixture evenly over the smashed potatoes.
  7. Sprinkle the grated Parmesan cheese generously over each potato.
  8. Bake in the preheated oven for 20-25 minutes, until the edges are crispy and golden brown.
  9. Remove from the oven and garnish with chopped fresh parsley before serving.

Notes

For an extra kick, drizzle with a little truffle oil before serving or serve alongside a creamy garlic aioli for dipping.
