  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray.
  2. In a shallow bowl, whisk together the eggs and olive oil.
  3. In another bowl, combine Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
  4. Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat thoroughly with the Parmesan breadcrumb mixture.
  5. Place the coated chicken breasts on the prepared baking sheet.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the crust is golden brown and crispy.
  7. Optionally, broil for an additional 2 minutes to enhance crispiness but watch closely to prevent burning.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

For added flavor, serve with a side of marinara sauce or a fresh green salad. You can also swap Italian breadcrumbs for panko for an extra crunchy texture.
