Bacon Cheddar Gnocchi Soup

This creamy Bacon Cheddar Gnocchi Soup combines crispy bacon, tender gnocchi, and sharp cheddar cheese for a comforting and hearty meal that’s perfect for chilly days.

  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups peeled gnocchi
  • 2 cups shredded sharp cheddar cheese
  • 1 cup half-and-half
  • 2 tablespoons all-purpose flour
  • 1 cup broccoli florets (optional)
  • Salt and pepper, to taste
  • 2 tablespoons butter

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving bacon fat in the pot.
  2. Add diced onion to the bacon fat and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more.
  3. Sprinkle flour over the onion and garlic mixture, cooking and stirring for 2 minutes to form a roux.
  4. Gradually whisk in chicken broth, ensuring no lumps remain. Bring the mixture to a simmer.
  5. Add gnocchi and broccoli florets, if using, and cook until gnocchi float to the surface and broccoli is tender, about 3-5 minutes.
  6. Reduce heat to low and stir in half-and-half and shredded cheddar cheese until the cheese is melted and soup is creamy.
  7. Season with salt and pepper to taste. Stir in cooked bacon pieces, reserving some for garnish if desired.
  8. Serve hot, garnished with remaining bacon and extra cheese if preferred.

Notes

For extra flavor, add a pinch of smoked paprika or fresh thyme. Serve with crusty bread or a simple green salad for a complete meal.
