Asparagus Zucchini Squash

A fresh and vibrant vegetable medley featuring tender asparagus, zucchini, and yellow squash, lightly sautéed to enhance their natural flavors.

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon lemon juice
  • Optional: 1 tablespoon grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add asparagus pieces and cook for 3-4 minutes until they start to soften.
  4. Add sliced zucchini and yellow squash to the skillet.
  5. Season with salt and pepper, stirring occasionally, and cook for another 5-6 minutes until vegetables are tender but still crisp.
  6. Remove from heat and drizzle lemon juice over the vegetables.
  7. Optionally, sprinkle with grated Parmesan cheese before serving.

Notes

For extra flavor, garnish with chopped fresh herbs like parsley or basil, or serve alongside grilled chicken for a complete meal.
