Artichoke Sandwich

Homemade artichoke sandwich with creamy layers

This Artichoke Sandwich features tender artichoke hearts combined with fresh greens and tangy spreads on crusty bread, creating a deliciously satisfying and healthy meal.

Ingredients

  • 4 slices of sourdough bread
  • 1 cup marinated artichoke hearts, drained and chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 cup baby spinach leaves
  • 1 small tomato, sliced
  • 1/4 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. In a small bowl, mix the mayonnaise and Dijon mustard until well combined.
  2. Spread the mayo-mustard mixture evenly on two slices of the sourdough bread.
  3. Layer the chopped artichoke hearts over the spread on each slice.
  4. Add baby spinach leaves and tomato slices on top of the artichokes.
  5. Sprinkle shredded mozzarella cheese over the vegetables.
  6. Top with remaining bread slices to form sandwiches.
  7. Heat olive oil or butter in a skillet over medium heat.
  8. Place sandwiches in skillet and cook for 3-4 minutes on each side, or until bread is golden brown and cheese is melted.
  9. Remove from skillet, season with salt and pepper to taste, slice in half, and serve warm.

Notes

For an extra flavor boost, add a slice of provolone cheese or a few fresh basil leaves before grilling the sandwich.
