African Peanut Soup

African Peanut Soup is a rich, hearty, and flavorful dish combining peanuts, vegetables, and spices for a comforting, nutritious meal.

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, chopped
  • 2 medium sweet potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup natural peanut butter
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • 1 cup chopped kale or spinach
  • Chopped roasted peanuts (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, ginger, and red bell pepper; sauté for another 3 minutes until fragrant.
  3. Stir in sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until sweet potatoes are tender.
  4. Whisk peanut butter into the soup until smooth and well incorporated.
  5. Add cumin, cayenne pepper (if using), salt, and black pepper. Simmer for an additional 5 minutes to blend flavors.
  6. Stir in chopped kale or spinach and cook until wilted, about 2 minutes.
  7. Remove from heat and ladle soup into bowls. Garnish with chopped roasted peanuts and fresh cilantro before serving.

Notes

For a creamier texture, blend half of the soup before adding the greens. Serve with warm crusty bread or over steamed rice for a filling meal.
